About the Recipe

This simple dish is one of my favorite dishes of all time!

It's simple, delicious, nutritious, and can be easily made in under 30 minutes. When you make it on the spot, I like the combination of warm, just cooked shredded chicken breast with the fresh lettuce, crispy green beans and juicy, tangy grapefruit.

This salad can be its own complete and balanced meal or you can have it before your main dish. You can even have it as a snack! Just make the serving size smaller.

Meal Prep Tips:

If you want to meal prep with this salad, simply double or triple the recipe. Then, do the following:

1. Cook the chicken breasts ahead of time.

2. Do the same with the green beans. Drain well and place in air tight containers.

3. Wash and spin dry the lettuce and store in air tight containers, too.

4. Separate the grapefruit into chunks and store in a separate container.

5. Season the grapefruit juice with salt and pepper and store in an air tight container also.

By storing them in separate air tight containers, you preserve the freshness longer.

On the day itself, just throw them together into a bowl or lunch box. Remember to keep the dressing separate if your doing a packed lunch for work so the greens don't get soggy!

Ingredients

• 250g (9 oz.) chicken breast
• ¼ tsp. sea salt
• ¼ tsp. black pepper
• 2 Tbsp. extra virgin olive oil
• 1 ½ cups (220g) green beans, trimmed
• 1 grapefruit (pomelo/suha)
• 1 head green lettuce

Preparation

Step 1
Season the chicken with salt and pepper. Heat 1 tablespoon of oil in a pan over medium-high heat and fry the chicken until cooked through and browned; about 5-6 minutes on each side.


Step 2
Cook the green beans in slightly salted water until they are crisp-tender. Remove from heat, drain and rinse with cold water.


Step 3
Cut off the skin of the grapefruit and divide it into segments. Do this over a bowl, so you keep all the juice for dressing.


Step 4
To serve, divide the lettuce leaves between plates, then top them with green beans, grapefruit, and chicken. Drizzle with the grapefruit juice and season with salt and pepper to serve.
