About the Recipe
It's truly a treat with these Mini Sweet Potato Chicken Pesto Pizza! Whew! <That is quite a mouthful!>
Level up your nutrition, enjoy new tastes and experiment with different ingredients.
This recipe is gluten-free as we don't use the usual pizza dough. Instead, we substitute healthy sweet potatoes!
Sweet potatoes are an excellent source of:
- complex carbohydrates
- beta carotene (which we need to make Vitamin A and is also a powerful antioxidant)
- fiber
- Vitamins C, B5, B6, E
- Minerals Manganese and Potassium
This recipe is simple to make and takes only 30 minutes to prepare!

Ingredients
- 2 large sweet potatoes
- â…“ cup (60g) basil (green) pesto
- ½ cup (55g) mozzarella, grated
- 1 Tbsp. olive oil
- 200g (7 oz.) cooked chicken breast
- salt and pepper
Preparation
Step 1
Preheat the oven to 190°C (375°F ) and line a large baking tray with baking paper or foil.
Step 2
Slice the sweet potatoes lengthwise (¼ inch thick) and rub with olive oil, then season with salt and pepper.
Step 3
Place the sweet potato slices on the baking tray and cook in the oven for 10 minutes. Remove from the oven, flip and top each slice with pesto, chicken and mozzarella cheese
Step 4
Return the tray to the oven and bake for a further 10 minutes or until the cheese has melted. Remove from the oven and garnish with basil leaves. Serve immediately.
