About the Recipe

This simple, healthy recipe is plant-based, vegetarian, gluten-free, low-carb, paleo, and keto friendly.

Using simple, easy to find healthy ingredients, it takes only 10 minutes to put this delicious and filling Avocado & Egg Paste together!

You can eat it on its own, mix it in salads, spread it on sourdough or your favorite gluten-free bread, or serve it with vegetable crudites.

How avocados improve your health:


  • 3 boiled eggs

  • 1 small garlic clove, minced

  • 1 ripe avocado

  • 1 tsp. lemon juice

  • 1 tsp. olive oil

  • 3 tbsp. coriander leaves, chopped


Step 1

Boil the eggs (put in warm water and cook 5 and a half minutes after the water has boiled, then pour cold water in the pot and cool). Once cooled, peel and chop into cubes and put in a bowl.

Step 2

Press the garlic, and add to the eggs.

Step 3

Half the avocado, remove the stone and cut the flesh into cubes. Place the avocado and coriander in the bowl. Drizzle with lemon juice and olive oil.

Step 4

Season everything with salt and pepper, and gently mix. Garnish with more coriander.

Serve immediately on bread or on its own. You can also add this to salads or to wraps.
